Preheat the oven to 220 degrees (top and bottom heat).
For the dough, mix the flour with the oil, water and ¾ teaspoon of salt in a bowl, either by hand or with a hand mixer, until you have a smooth dough; this takes about 10 minutes. Cover the dough and leave to rest at room temperature for 15 minutes.
For the topping, peel the onion and cut into thin rings; dice the smoked tofu.
Roll out the tarte flambée dough thinly into a rectangle on a lightly floured surface and place on a baking tray lined with baking paper.
Mix the cream cheese with ½ teaspoon of salt, a little pepper and the lemon juice, then spread it over the pastry. Scatter the onion rings and the tofu over the pastry as well.
Bake the tarte flambée in the preheated oven for about 20 minutes until golden brown.
Serve sprinkled with thyme leaves.
