Mix the meat alternative in a bowl with the spices, salt, pepper, soya sauce, mustard and 2 tablespoons of oil, and leave to marinate for 10 minutes.
Peel the onion and slice it thinly. Remove the stalk from the tomato, then slice the tomato and the cucumber thinly. Finely grate the cabbage.
Heat the oil in a frying pan and briefly fry the meat alternative over a high heat, turning regularly.
Cut the flatbreads open – but do not cut all the way through – and unfold them. Spread 2 tablespoons of tzatziki on each underside. Top with the tomato, cucumber and onion slices and the meat alternative, then place the top halves of the flatbreads on top. Finally, spread another 2 tablespoons of tzatziki on top.

Tips
Instead of tzatziki, you can also use normal or vegan mayonnaise (see recipe), aubergine and mint cream (see recipe) or cocktail sauce (see recipe).
If you like it spicy, season with sambal oelek or harissa.
