Cut the peppers in half, remove the seeds and cut into fine strips.

Quarter the apple, remove the core and cut the apple into thin slices.

Heat the oil in a frying pan and gently fry the shallot and garlic. Add the pepper strips and fry for 5 minutes. Add the paprika and sugar, season with salt and pepper to taste, and deglaze with the vinegar and apple juice. Add the cream alternative, bring to the boil and reduce until the desired consistency is reached.

Finely chop the chives.

Add the apple slices to the pan and cook until they are still slightly firm.

Serve the goulash sprinkled with the chopped chives.
Tips
This goes well with pasta, mashed potato (page 305), potato and halloumi fritters (page 208) or rösti (page 275).

Pears can be used as an alternative to apples.
