Peel and finely chop the onion and garlic.

Heat 1 tablespoon of oil in a frying pan and gently fry the onion and garlic until translucent, then leave to cool.

Wash the potatoes thoroughly (they do not need peeling) and grate them finely. Squeeze out any excess liquid briefly and mix in a bowl with the onion, garlic, flour and eggs. Season generously with salt and pepper.

Heat 1 tablespoon of oil in the frying pan and add about 2 tablespoons of the potato mixture per patty, frying until golden brown, turning the patties once. Fry in batches in this way to make a total of about 16 latkes. Drain on kitchen paper.
Tips
Latkes are traditionally served with apple sauce and sour cream.

They freeze very well.
