tart apple / tart apples (e.g. Boskoop)
Put the lemon juice, water, sugar and cinnamon into a saucepan.

Peel and quarter the apples, remove the cores and cut the apples into small cubes. Add them to the liquid in the saucepan and bring to the boil.

Cook the apple cubes for 10–15 minutes until soft, then purée with a hand blender.
Tips
You can use apple juice instead of water, which reduces the amount of sugar needed.

Make a large batch of apple purée to keep in stock and pour it into sterilised preserving jars whilst still hot. It will keep for one to two years.
