Oil
Mix the lemon juice with 1 tablespoon of sugar and a pinch of cinnamon in a small bowl.
Mix the remaining sugar with the rest of the cinnamon in a second bowl and set aside.
Peel the apples, remove the cores and cut each apple into six rings. Mix the rings with the lemon juice straight away.
Mix the flour and mineral water in a bowl.
Beat the egg white with the salt until stiff and gently fold into the flour mixture.
Heat the oil in a frying pan.
Remove the apple rings from the lemon juice, coat them in the batter several times and fry in batches in the oil for 2 minutes on each side until golden brown. Drain on kitchen paper and toss in the cinnamon and sugar mixture.

Tips
These apple fritters taste particularly good with vanilla sauce or vanilla ice cream.
