To make the salad dressing, place all the ingredients up to and including the pepper in a tall container and blend well with a hand blender until emulsified.
Quarter the apples, remove the cores and cut the apples into thin slices. Place the apple slices in a bowl and mix with the lemon juice.
Roughly chop the hazelnuts and toast them in a frying pan without adding any fat.
Remove the tough leaf stalks from the kale, tear the leaves into bite-sized pieces and place them in a bowl. Add the salad dressing and mix thoroughly.
Fold in the apple slices and sprinkle the salad with the chopped nuts.
