Tear the iceberg lettuce into bite-sized pieces. Slice the gherkins thinly.

Mix together the ketchup, mustard, soya sauce, Madras curry powder and salt to make a marinade. Mix the meat alternative with the marinade, cover and leave to stand for 15 minutes.

Heat 2 tablespoons of oil in a frying pan and sear the meat alternative, turning it several times. Remove and set aside.

In the same frying pan, heat the remaining 2 tablespoons of oil and fry the eggs on both sides.

Toast the slices of bread.

Lay eight slices of toast side by side on a work surface and spread with the cocktail sauce. Spoon the coleslaw onto the cocktail sauce. Then place the meat alternative and iceberg lettuce on four of these slices, and the eggs and gherkins on the remaining four slices. Assemble the club sandwich. Place the slice with the meat alternative on the bottom, followed by the slice with the egg, and top with the plain slice of toast.

Cut the club sandwich in half diagonally and insert a wooden skewer into each half of the sandwich.
Tips
If you leave out the fried eggs, the club sandwich is vegan.
