To make the walnut Parmesan, peel the garlic and chop it finely together with the walnuts. Place in a tall, narrow container with ½ teaspoon of salt. Purée with a hand blender until the mixture has a Parmesan-like consistency.

Cut the courgettes into long strands using a spiraliser, break them into spaghetti-length pieces and place them in a bowl.

In a bowl, mix the courgette spaghetti with the sauce and sprinkle with the walnut Parmesan.
Tips
The name "spaghetti" comes from its shape and appearance; the dish tastes good served either cold or warm. It looks particularly attractive with a mixture of yellow and green courgettes.

Carrots, beetroot and cucumbers can also be used instead of courgettes.

A popular name for the dish is "zoodles", which is a portmanteau of the English words "noodles" and "courgette".

If you prefer your courgette spaghetti a little softer, you can toss it with a little salt before serving and leave it to stand for 15 minutes.
