Puree the meat alternative with the grated lime zest, Thai curry paste, soya sauce and the egg in a food processor or in a deep bowl using a hand blender.
Chop the coriander and mix it into the mixture. Season to taste with salt.
With wet hands, shape the mixture into 16 tablespoon-sized patties.
Oil the grill rack and grill the patties over a medium to high heat for 3–4 minutes until golden brown, turning once. Alternatively, the patties can also be fried in a frying pan.

The patties taste good either warm or cold. They go well with sweet chilli sauce.
