Peel and finely chop the shallot. Finely chop the parsley.

Heat the oil in a frying pan and briefly fry the chopped shallot, then leave to cool slightly.

Add the soya mince, the parsley, and salt and pepper. Mix everything together with your hands until you have a smooth mixture and season to taste. Chill for 30 minutes.

With slightly damp hands, shape the chilled burger mixture into four patties. Fry these over a high heat in a frying pan or on the barbecue for 4 minutes on each side.

Toast the burger buns briefly on the barbecue or in the oven and spread a thin layer of cocktail sauce on both halves.

Place 1 lettuce leaf, 1 slice of tomato and 2 slices of gherkin on each bottom half. Place the patties on top and cover with the top halves of the buns.
Tips
These go well with potato wedges (page 280) and coleslaw (page 228).

The patties freeze very well. For cheeseburgers, place 1 slice of cheese on the patty after turning it for the first time and allow it to melt.
