Peel the onion and garlic and chop them finely, along with the herbs.
Heat 3 tablespoons of oil, add the soya mince and fry for 3 minutes.
Add the diced celery and carrots, the onion and the garlic. Then add the tomato purée and cook for 2 minutes. Add the tomatoes, stock and herbs, and bring to the boil.
Season with salt, pepper and nutmeg, and cook for 15 minutes.
Prepare the mashed potato as described on page 305.
Finely grate the cheese. Grease a gratin dish with the remaining oil.
Add the peas to the finished sauce and stir in. Pour the sauce into the gratin dish. Spread the mashed potato on top and sprinkle with the grated cheese.
Bake in the oven at 180 degrees (top and bottom heat) for about 30 minutes.

Tips
This recipe is ideal for using up various vegetable leftovers. These can be finely diced and added to the sauce. Leftover mashed potato can also be put to good use in this dish.
