Mix the eggs with the milk alternative.

Cut the bread into small cubes and soak them in the egg mixture.

Peel and finely dice the onion.

Melt the butter in a frying pan. Add the onion and bay leaves and fry for 3 minutes.

Remove the bay leaves. Add the stock powder and stir until dissolved. Then add the soya mince and fry everything together for 5 minutes. Leave to cool.

Finely chop the parsley, add it and mix in.

Squeeze out the soaked bread by hand and mix with the soya mince. Mix by hand until smooth and season generously with salt and pepper.

Grease a loaf tin with a little oil and line the base with baking paper.

Spoon the mixture into the tin and bake in the middle of the oven at 180 degrees (fan) for about 1 hour.
Tips
The meatloaf can be enhanced with ground cloves, a pinch of cinnamon and allspice.
