Cut the smoked tofu into small cubes.

Peel and finely chop the onion.

Heat the oil in a frying pan, add the smoked tofu and fry over a medium heat until crispy. Then add the onion and fry briefly.
Remove the pan from the heat.

Cook the spaghetti in boiling salted water until al dente, following the instructions on the packet.

In a bowl, mix the egg yolk thoroughly with the cream and hard cheese. Season generously with salt and pepper.

Drain the spaghetti, reserving 1 ½ dl of the cooking water. Add the spaghetti to the frying pan with the smoked tofu and mix in carefully. Pour the pasta water and the egg mixture over the top and stir in the peas.

Heat over a low heat for 3 minutes until a creamy sauce forms. Season with salt and pepper to taste if necessary.
Tips
Any leftover egg white can be frozen and used in another dish.
